Yummy......

It was a wild day yesterday and the snow continued throughout the day.  Plows were busy up and down the streets but with most businesses closed it made it easier to keep up with the plowing.  Today it is bright out and small flurries still falling but hopefully train will be running to Miramichi.
 
Will be gone till Monday folks so blog picked up after that day.

 My mother in law use to make a delicious carrot cake and this looks very close to it.  I also remember many a times my friend Rose and I got together to head to Pizza delight for ceasar salad and carrot cake, lol  Remember Rosie.. miss those times.
 
Ingredients:

3 eggs beaten
2 cups sugar
1 1/4 cups oil (canola, or light Olive)
2 1/2 cups flour
1 tsp. cinnamon
1 tsp. baking soda
2 tsps vanilla extract
2 cups medium coconut
2 cups finely grated carrots
1 19 ounce can crushed pineapple (undrained)
1 cup chopped nuts (walnuts or pecans or no nuts! )

Preparation:

Beat eggs well, add sugar and mix well. add oil and beat a little more. Then add the flour, cinnamon and baking soda. Mix well.  Add coconut, grated carrots, pineapple, nuts and extract. Mix well. Pour into a 9x13 pan. Bake 1 hour at 350 degrees. I line the pan with wax paper and enough to hang over the pan for easy removal. If icing the cake make sure to let it cool completely.

Icing:

1/2 cup butter
6 ounces of plain cream cheese
2 cups icing sugar
1 tsp vanilla extract

Ice cake, make some tea or coffee or pour yourself a big glass of milk and EAT!!

The weekend....

The real American Sniper


On Thursday we made a trip to Saint John to see Uncle Donnie in hospital, found him to be in good spirits
despite a lot of pain after a fall last week.  Further tests continue through this week. 

On Friday night we decided to go to movies to see American Sniper, oh boy certainly worth the time to see and
certainly up for academy award.

A bit of snow fell on Saturday night but off to hockey game for Malcolm, in the afternoon we watched Garret
play a really good game of hockey, seemed he was out on the ice most f the time.

Anitha and Rama packing up for Myrtle Beach, hope the weather stays ok for them all the way.




Storm called for tomorrow so stay warm, lots of food in and candles.

Well the gang thought we would really appreciate a few photos of Myrtle Beach showing
how warm the temperature is as they golf in their short pants.

It has been warm but golf course is wet which means cart path only so lots  of walking;

Tonight they found a new restaurant, every year we seem to find a restaurant that is our favorite
and they found it tonight, "Midtown Bistro" delicious and not very expensive.

Jelly Bean Road, Newfoundland.. I remember the houses over in Newfoundland being all different colors.. Actually the houses reminded me of the houses in Saint John South End, so many of them now torn down. This picture was on facebook which Doris Nowlan had .

And last picture is outside the house but I could not catch the snow that was coming down.

Hockey weekend for Trent....

Not only was Trent busy playing hockey but he also had a number of refereeing games which
he loves.....making money lol

We didn't venture far, but Sunday was a beautiful day.  I did some work on smash book, trying to finish off mine and working on The Cormier Family's year.

 

Well that little ipad is certainly a gem, heard it ringing other day and there was my friend Susanne on other end, she got her new ipad for Christmas and loves it as much as I do.  We talked for quite awhile and so nice to see the person you are talking to.  Talk with Paula and Laurie every day down in Myrtle Beach, Paula seen a condo for us and took pictures and sent through to us... my goodness technology has certainly come a long way.

Kate coming for some time with Nanny and Grampie tonight.....guess I'll be busy for sure. lol..

Pope visits Moncton

Throw back Thursday and many from New Brunswick will remember Pope John Paul 11 visit to
our city.....

In our house all was normal, I did have a couple of people staying with us from Saint John who were
in the choir, people I did know from Saint John.

Then my cousin Larry arrives, in a truck, with banners of the Pope's visit wanting me to go with him
to Magnetic Hill where Mass was being held.

We  started at airport. then to Catheral and then out to Magnetic Hill where buses were waiting to take
people to the site.  Larry says No we can go right up there in the truck and I thought for sure we would be in jail by end of day. lol

Whatever Larry told the security I will never know but we drove right in site, sat in the area right down front  of altar and I swore to Larry that we had better not be the people getting communion, he just laughed but you had to know my cousin.

In all it was a perfect day...............and I did feel very blessed to meet such an incredible man.

Thank you Cousin for making my day so special..

After a month I finally got a morning out with Anitha and we started with
a MacDonalds breakfast.. Love there coffee, find it better than tims.

We did a few errands around town , drove through Dieppe and cannot believe
how much it has grown, whow the apartment buildings and condo's is unbelieveable.

I got to Michaels, went with one thing in my mind BUT never have I got those
good specials they have, racks always empty when I go but today was the day,
whow what great buys, for 49 cents - 1.79 a pkg. I had a great time finding the
goodies I wanted, now many of you know my supplies already but this I could not pass. lol

A trip to Swiss Chalet to get my free goodies on  scratch tag at Christmas , nice soup and a salad,
a steak and cheese pinni from  my  friend with gift card  at Christmas from   Tims and Supper is ready... What a good day.

Snow day




Yes yesterday was a snow day and even though I would love to head out somewhere,
(have a place in mind) Micheals !! I will stay put and watch the pretty snow from window.

What do you like about Winter??

For many there is nothing they like but others do enjoy the chance to do winter sports like
skating skiing, sledding , and one of my past favorites curling.

What I like now is:

first snow which means I am out of here soon for the South, lol

opening the door and peeking out from time to time to see how cold it is because you don't dare
go out if its to cold as you might slip, fall, have broken bones and not get south...

Anyway seen this cute sign on internet and had to snatch it up.

2014 brought us to Myrtle beach with lots of good times and memories.  Each year I prepare a
scrapbook or smash book for Paula and Laurie of our time down south and this year I forgot to
take pictures of my work so Paula sent me a few pages to show you.

Laurie and Paula  are now down in Myrtle Beach along with Gary and Liz, hope they enjoy nice weather for a few golf games.  Our plans are to leave towards end of February , hope some good sales are still on then. I may not get to Myrtle beach for a bit but I have my friends on the lookout for bargains.......lol

Today its snowing but school is in session....Its so pretty to see the snow but open the door and you freeze. I'll stay put and head down to my craft room.

I came across this photo of the cathedral while reading through some interesting blogs, really caught my eye.  It is over 400 years old.

The Cathedral is now a museum. During restoration work in the seventies a wooden spiral staircase was discovered within one of the walls. Visitors now take this route into the central church, with its extraordinary, soaring tented roof and a fine 16th Century iconostasis. You can also walk along the narrow, winding gallery, covered in beautiful patterned paintwork.
One service a year is held in the Cathedral, on the Day of Intercession in October.
