Well no way can I come up the river without a stop at Pumpkin Patch...... "Where is the
Spoon Bread"? Made in cans its one of the most delicious breads I have ever eaten..
While trying to take a few pictures of the goats, I felt a tug on my camera strap and realized one
of these guys had the strap in his mouth. Got it out ok. lol
We got some beautiful corn peaches and cream and some macroons for the kids.
1st day of school for Kate, Boys started yesterday. Trent in High school, Kate in grade 12 and
Garret in Middle school.... where did time go!!
Bread recipe I received from Malcolm's aunt...... she said its delicious
1/3 c brown sugar (not packed)
1 tsp. ground cinnamon
2/3 c. white sugar
1/2 c butter or margarine softened
2 eggs
1-1/2 tsp. vanilla
1- 1/2 c. flour
1-3/4 tsp. baking powder
1/2 c. milk
1 apple, peeled and chopped
Preheat oven to 350. Grease and flour a 9x5 loaf pan. Mix brown sugar
and cinnamon together and set aside. Beat white sugar and butter
together til smooth and creamy. Beat in eggs, one at a time until
incorporated. Add vanilla. Combine flour and baking powder and stir into
creamed mixture. Mix in milk until smooth. Pour half batter into pan.
Next add half the apples and half brown sugar mixture. Lightly pat
apples into batter. Pour remaining batter over apples. Top with
remaining apples and cinnamon mix. Lightly pat thiis mixture into
batter. Swirl brown sugar through apples using a spoon. (I just shook it
all over apples to cover them).
Bake 50 to 60 min. or until toothpick comes out clean (the recipe says
30 to 40 min. but I have made this a few times and it takes regular loaf
time for me).
Also make a double recipe. If I am going to chop apples, might as well
make it worthwhile. This also freezes beautifully.
